I haven't seen the K3 but know that it can be remotely
controlled.
I wonder if anyone has any idea about the accessibility of
the provided software?
Or has modified it?

Have you seen the k3 price?  I'd love to see one.  The other
thought is that the ts570 series has been out long enough
that there are very often units in great condition for sale
used.

Someone on this list has told me that the 480 is a little
bit more verbal in its accessibility so will probably go
with that rig.

Since I plan to operate close to qrp the 2000 may have more
bells and whistles than I need right now.

I suppose I could wait and get the upcoming Elecraft k3 that
should be coming out soon.

It's now available as a factory built rig besides being a
kit.
