I never knew these options existed with the new-gen Stream.

My next question is:  How exactly do you adjust the record volume level if
you set the record volume menu to manual adjust?

It has three recordingmodes manual, fixed, or automatic that can be selected

from the recording menu.   The manual level is as it says can be adjusted 
and the automatic adjusts itself depending on the level of the audio.
