Probably none- evolutionarily, the plant's main aim with the skin will be to
fight off pests. There will be plenty of fibre. I'm not sure about
phytochemicals, but I don't think we'll have evolved to depend too much on
the content from skins. After all, the bitter taste of orange skin for
example is a strong turn-off- I don't think we're supposed to eat it.
Besides with all the sprays on the skin, any excuse is a good one to avoid
fruit skins!
