James,

You might have digestive problems that carbohydrates
make worse. I'm fairly carbohydrate intolerant. I
can't eat much raw fruit or vegetable or I get
constipated. There's a diet called the Specific
Carbohydrate Diet and a web page (plus mailing list)
that may very well address your symptoms. It's

I'll put on weight eating just fruits and vegetables
and lose weight eating lots of meat even though I'm
sure I'm consuming many more calories with the meat.

Nuts, in general are hard to digest, even for folks
with good digestion. I think the best way to consume
nuts is to soak them overnight. This frees up the
enzyme inhibitors.

I do a low carb paleo diet and skip the nuts. I get my
fat from olive and flax oil and from avocadoes.
