Actually butter does contain a decent amount of dairy proteins. You might be
thinking of clarified butter, which can be made by melting regular butter
and skimming off milk solids or simply buying it in a store as ghee.
(Btw, I have heard a few times that ghee and clarified butter is not exactly
the same. Not sure if that is true or not, and if the difference is nutritional,
or cultural).
