I have found Ginseng Concentrate an excellent substitute for coffee &
tea.  Don't know how it will stand as a Paleo item?  It comes in a jar and
is tar like in substance.  You put about 1 - 2 grams into hot water
according to taste.  It looks just like coffee, has a strong smokey taste,
and also, seems to give a little kick, maybe psychological.  I am always
amazes at how people think they get a big caffeine kick out of Espresso,
when it fact it has less caffeine than coffee.  The longer roasting of the
beans burns out the caffeine.

The Ginseng extracts are usually 96% ginseng 4% water and made from 6 year
old roots.
