shrimps can be dry whole ,because once it is dry you can eat everything,
shell head and legs ,it is crunchy and melting like a corn chip. clams can
be dry in the shell but the meat stick to the shell , if you remove 1st you
loose the juice .

small fishes can be died whole ungutted ,for bigger fishes  cut thin slices
in the fillet, oily fish like salmon loose a bit of their fat while drying
,making a mess ,it is better to leave the skin on , so most of the fat being
underneath the skin is not wasted . the skin is easely remove once dry by
inserting the blade of a knife between the skin and the meat, scrap the fat
off the skin that is the myummy part..
the oily fishes are best stored in an air tight container out of the light
and in the cold.
