<< I have two kids, both reared macro until the last few years. One can't
stand the
fat on meat. The other hates the meat but gobbles the fat off his
brother's plate. Sort of like that nursery rhyme "Jack Sprat could eat
no fat, his wife could eat no lean; but between the two of them they
licked their plate clean . . .."

Judy,
Not everyone has the same type of inherited metabolism! Your two kids
probably have different ones from each other. People on paleo sometimes think
that we should all eat a high fat/ high protein diet, and this is not the
case for everyone. It depends on the type of metabolism you inherited. This
is a genetic factor that cannot be changed. To learn more go to Dr. Stoll's
website:

http://bcn.net/~stoll/index.html

and search archives for metabolic diet. If you have an "agriculturalist"
metabolism you should not eat a lot of fats or dark meats, but you can still
be "paleo" in terms of avoiding the newer foods such as grains, dairy, beans,
etc.
