The FAN (Food Allergy Network) newsletter recently contained a recipe for a
"mock cheese sauce".  It is made from nutritional yeast.  I tried it on
macaroni for my cheese-loving family (my 17 month old son is the only one
with a dairy allergy).  Since the rest of us have eaten and loved cheese all
our lives we are pretty picky about substitutes.  It was a pretty decent
substitute, although I think I will make a few changes to it when I make it
again.  If anyone is interested in the recipe I will be happy to post it.

The health food store where I purchased the nutritional yeast also had a
"mock cheese sauce" mix which was made from nutritional yeast.  I would have
to check it again to be sure, but I think that it was completely dairy-free.
