Re:  Why is it (coconut milk) not raw, is it heated when it is extracted?

Answer:  The coconut is usualy heated before blending and to facilitate easy
of blending.  Also heat is used in canning.  If you want it raw, buy an ice
pick, a hammer, Vita-Mix or use a high-powered blender, fresh coocnuts, and
make it yourself.  Nothing in a can will be raw.  Of course, one can still
benefit from coconut milk from the can (I do!).  It may be a matter of
convenience/trade-offs for some.
