This is a regrettable weakness of Ray's book. I will leave it to him to
explain his reasoning. Suffice to say, I was satisfied with the intent of
Ray's statement after he e-mailed me. The biology is not quite correct,
albeit the end effect is the same.
Those interested in the biochemistry of all this can either wade through
the technical papers, or read Lyle McDonalds book on Ketogenic Dieting.
I'd recommend the latter unless you seek a cure for insomnia.
