For the record, tallow from beef suet is only about 4% PUFA,
according to the USDA database. Of that, only a small amount is
w-3 fat, just .6g per 100g, and that is linolenic acid. The
amounts given for DHA and EPA are zero.
According to Cordain, grass-fed beef tallow does contain some DHA
and EPA.
