This past week, after having an upper endoscopy done to check for a
possible ulcer (to explain my low iron levels), the doctor did a biopsy
of my intestine, and found that I had severe villus (sp?) atrophy, and
diagnosed it as celiac's disease.  After doing some searching, to my
relief, I found this list...

What I'm trying to find out, after being overwhelmed by the number of
messages in the logs of this list (it will take me a while to get through
them!) and the suggested list of things to avoid, what I want to know is,
where do I start?  Do I send away to anyone and everyone for lists of
products?  Is there a list of commercial products you can and cannot have
(as I said, I haven't gone through all of the back messages yet)?  Should
I buy a bread machine?  Pasta machine?

For now I'm just trying to concentrate on not eating things that are
obviously wheat products, and checking labels on stuff.  Breakfast is no
problem, as I usually have Corn Flakes or Rice Krispies, some fruit (but
no more toast or bagels).  Lunch is more of a problem, as I usually made
a sandwhich with whole wheat bread and lunchmeat, and a pack of
tastycakes.  Dinner will be tough, to, but I like rice, veggies, meats,
but I'll have to be careful with the sauces, and find a different noodle
than what I eat now (rice noodles?).

I never really had any symptoms (I've always been on the pale, thin side,
even though I usually ate a lot) until recently, but nothing severe.  I
thought maybe I had an intestinal virus, but I can't say I was uncomfortable.
So how will I really know if I'm fixing the problem?  Maybe I'll finally
gain some weight?  (I'm 30, and have always been around 150.. now I'm
closer to 145).

Anyway, I would appreciate any suggestions on what things I should focus
on, and what Subjects I should scan for when looking through that back
messages (almost 1 Megabytes of data) for more important items.
