Try putting some vinegar in the soaking water. If that doesn't help
use a strong detergent and then soak the trays in several rinses.

To avoid future messes you can cut baking sheets to size and use them
under meat, sticky fruit etc. After an hour you can remove the paper,
when the item has dried enough. The paper can be used again.
If you use paper you cover only one half of the tray and then on the
next level the other half- This lets the air go up the dehydrator in a
zig-zag fashion.

Cecilia in Sweden - who thinks the best thing about this diet is my
dehydrator :-)
