Honestly I haven't given it much thought. Usually, when
I don't want any flavor I use almond oil (its flavor is
very mild) otherwise it's either olive oil or coconut
oil. I would probably have to try a few things. Also,
I would attempt to eat it as little cooked as possible.
I know it's kinda weird tasting raw, but then again I
have learned to like a lot of things that at first were
very hard to even swallow (e.g. urchin sashimi.  The first
time I had it I almost threw up. The second time it was
better, but still not something I enjoyed, the third time
I actually found something appealing about it. Somebody
once described it to me once as fossilized fish snot
that has rotted on the sea bed for years and after trying
it for the first time I agreed.)

I was a kid back then and didn't cook them myself - my
mom would do the job. If I recall correctly she either
breaded or flowered them, other than that (and may be
salt) I don't recall much in the way of spices. Also,
between the brain itself and the butter, the dish is
VERY greasy, so it went well with lots of potatoes and
such. Not sure what I would eat now with it, given that
I am on a low carb version of paleo right now.
