Hi Mary,

 From Let's Have Healthy Children by Adelle Davis, " During WW1 and
2....because grains were not allowed to be refined, diabetes almost
disappeared."

Essentially the gluten antibodies in the grains are similar to the
pancreas. The body tries to fight off the gluten, gets carried away and
fights off the pancreas too and destroys it. This is auto-immune. (Nutshell
description). Casein in dairy products causes a similar reaction.
