The important difference in cutting boards seems to apply most significantly
to older & used boards as opposed to brand new ones. New boards can be
cleaned and easily maintained be they of plastic or wood.The advantage to
wood boards is that the crevices [which are the prime location for these
'germs' dry out and that prevents micro-organisms from lurking about in a
viable state. The crevices in used plastic boards maintain enough moisture to
allow the organisms to survive.
