On July 1 Claire Lazenbnik posted a recipe for Breakfast Cookies she created
by modifying a non-gf recipe.
They sounded very interesting but called for poha flakes, which I had never
heard of.
I risked a leap of faith and modified them further using unsweetened grated
coconut in place of the flakes and changing a few other things. They turned
out to be very nice so I posted my 'Modified Breakfast Cookie' recipe.
There have been some favourable response as follows, but the credit goes to
Claire for starting the process.

I can't quit eating them and my son is the one with cd. He thinks they
are ok but he is 13 and if it is a little healthy then it is just ok! I
put raisins and apricots in mine......I'll try something different next
time. Can you just make them without anything, like a mock oatmeal
cookie? Just choc chips? I didn't know if they would have the same
texture without the fruit. I tell ya they are just wonderful. "

might want to note that for people on the link. (I thought it might mean
that of the 2.5 cups of gf flour mix, half of it should be soy flour!)

(This is quite correct - I did leave out 'cup' it should be 1/2 CUP of soy

I answered several other questions privately, to summarize other info - To
substitute for milk in baking (muffins, cakes, cookies, pancakes, etc.) I
have used equal amounts of Sprite or 7UP, either diet or reg.
When I modified the original recipe, I cut the fat or oil in half and added
two eggs. Probably didn't lower cholesterol, or reduce fat by much.
Thanks for all the positive responses. Hope I got all the questions
answered.
