After reading that "one molecule of a toxic gliadin may be as damaging as
10,000", I am wondering what good does it do to follow a GF diet. Even if you
carefully read ingredients and "do your homework" on product listings, you are
bound to unintentionally ingest gluten because some ingredients have been
changed, or perhaps cross- contamination has occurred unknowingly. If a
molecule causes as much damage as 10,000, why bother with the expense and
inconvenience of a GF diet in the first place. Don't get me wrong, I truly am
concerned for my celiac daughter's health and I am fine with providing the diet
inspite of the cost. It just seems so futile! (I might add that my daughter's
symptoms were not as serious as others I have read about on this list. Just an
occasional large stool, single bout of diarhhea every few months.)
