I have been experimenting for a long time with fried chicken - every type of
flour and types you can buy that are gf. The absolutely best chicken I have
fried was with corn flour (not cornmeal). I rinsed it with water and shook
it in a bag with salt, pepper, cayenne, and a little garlic. Couldn't even
tell it was gf. I also froze a large amount and thawed it in microwave -
wonderful.
