Apparently by changing permeability of cell membranes, making it
more difficult for insulin to be utilized. There is quite a
large body of evidence supporting the link between saturated fats
and insulin resistance. I have posted abstracts more than once
before on this list, so I won't do so again, but I'll mail them
to you (or anybody else) off-list if you like.
Incidentally, this is something that Barry Sears has something to
say about in the _Anti-Aging Zone_, I believe.
