Thanks to all who responded to my inquiry regarding quinoa.  I received
17 responses in total.  15 said go for it, with two stating emphatic
NO's.

One of the respondents had inquired of the specific brand from the
Quinoa Corp. about possible contamination and received the following
reply:

The Quinoa Flakes are 100% quinoa.  We have many people with celiac who
have quinoa and quinoa flakes as a regular part of their diets.  Our
quinoa is grown high in the Andes mountains of Bolivia and no wheat is
grown anywhere around, so in the growing process there would be no
contamination.  And in our warehouse we only have quinoa and grind our
own flour.

Although we do not have the machinery to flake our own quinoa flakes and
have it done elsewhere, the company we use is very reliable and does
extensive testing on each batch that they process.  We have not had any
problems with any contamination of our flakes.

The shelf life is about six (6) months, although if kept in a cool dry
location can be as long as one year.  Please know that these are 100%
orgainc and have never had any pesticides so it is important to keep
them in an air tight container.

quinoa with confidence and see how it goes.
