I could very well be incorrect, however, I thought that the Canadian
Celiac Association determined that distilled alcohol was safe. This is
why distilled vinegar is considered safe here, and not in the states.  I
think that is one on three ways that we differ from the American
Association.  I think it is believed that the protein is removed in the
distillation process.  However then there is carmel colouring (sometimes
even in tequila) or re-added mash that can clearly add gluten back in
even if it was okay before.   I think it is just one of those uncertain
things like oats for some people(not that I have ever bothered trying).
Obviously this provides no answers, just my perception of the
difference.  I still try to just stick to the American view (even though
I am proudly Canadian)  because if there is a dispute, I like to err on
the side of caution.
