I practically live on Lamb, because I can get the New Zealand lamb where
I live and New Zealand Lamb is range fed...I have really aquired a taste
for it myself.

I am glad you brought this up to the group I was goin to do the
same...after years of a vegetarian diet~No Animal at all, let alone fat,
I have been wondering about the fat myself, but it hasn't stopped me
from eating it, I love the fat, it hardens up like no other fat I have
seen, A little scary

Maybe Ray has some insight on this...I try to be fearless about my fat
consumption, as I understand that it is a nessesary part of the diet.

The best way I have found to cook it is to roast a leg in the oven
covered for 2 hrs. at 300º.  This does not over cook it and it is
absolutely delicious.  Then I drain off the juice into a jar and
refridgerate it.  The left over lamb I also put in the fridge and when I
want to eat it again I slice some off, put in some of the , now jellied
juice and maybe a little piece of the , beautiful white, hard fat that
covers the jelly into a frying pan, season it with a little herbamare
and all-purpose herbs from Frontier(non-irradiated)and just warm it up,
then I pour the the delicious juice over my steamed collards or kale and
eat a most yummy dish...ummmm, that made me hungry.  Te chop are very
good too I lightly cook them in a frying pan,  just enough to to kill
any bacteria on the out side.  I like all meat as raw as I can dare to
eat it. It jst taste better!  You can also find range fed beef,
organicly grown on the internet and have it shipped to you, if youhave
the money and a freezer.  I have found a source of organicly grown
rabbits in my area but haven't tried it yet.  Beware of super market
meats, they are now allwed to irratiate all meats...Very SCARY too me!
