Hmmm... I'm guessing the olive oil congeals in the fridge and
that's your jelly coating. But it's odd that it doesn't drip
down after warming.

But you're not getting rid of the oil/wine into which the
saturated fat has leached, so I guess you're actually
*supplementing* it with monounsaturated.

You are fortunate that your cardiologist made this suggestion. I
have a good friend up in RI who had angioplasty last year and
quintuple bypass this year. His cardiologist wants him on an
Ornish thing, and I'm afraid it will kill him.
