My favorite bone is from lamb shanks. Usually, I can just suck it out
like from a straw. If it resists, a long, thin wire will help to mash
it and get it out. Don't suck too hard, though, or you may wind up
breathing them and choking.

Brains and Eggs was a good dish I remember, growing up in Florida.
You just chop the brains and mix them with eggs and scramble the whole
thing. We seasoned them with salt and pepper. They were usually
fried in bacon fat, as I recall. Brains are very rich, and a little
goes a long way. They have a mild, pleasant taste, IMO.
