If you have money to burn, you can buy those bags of salad
greens, and then add whatever you like to them. There are some
nice blends of greens available, but they are a convenience food
and you will definitely pay through the nose.
A similar solution that I've mentioned before is batches of
"garbage salad". I buy those bags of shredded "cole slaw" mix,
containing, cabbage, broccoli, carrots, whatever. To this I add
olives, artichoke hearts and pine nuts. Then I mix in some of my
Italian dressing and keep it in a plastic bin in the
refrigerator. The dressing keeps the stuff from getting dried
out and brown, and a batch can last for several days. I can use
this as my all-purpose "veggie" serving. 2 cups of the stuff is
very chewy and filling, moreso than lettuce-based salad.
The term "garbage salad" is my daughter's. No one else in the
house will touch the stuff.
