Our local newspaper ran an article in the Sunday edition featuring the Dublin General Store in NW Michigan. The store makes a huge amount of jerky and ships it all over the world.
Meats used include: beef, buffalo, elk, turkey, venison, ostrich, pork. Some of it is marinated, but some is left plain. It is possible to order wild meats that have not been marinated, but have been hickory smoked for 4.5 hours.
The article mentioned that many people are stocking up on the jerky for Jan. 1, 2000 just in case they can't cook. I wonder if you consider jerky paleo. Humans have probably been smoking meat for a long, long time. So, although it isn't raw, would it still be paleo? I'd love to use it on trips.
