Erik Hill asked about: Winter squash as in zucchini or yellow
squashes?
I think you are confusing winter squashes and summer squashes. Winter
squashes include acorn, butternut, buttercup, delicata, kabocha, hokaido,
sweet dumpling, sweet mama, honey delight, etc....These are denser, starchy
carbs and more carb dense than summer squashes. Spaghetti squash is often
considered a *winter squash* but it is a fibrous carb (not starchy); it is
very low in carbs. Yellow squashes and zuccini are *summer squashes* and
are considered fibrous carbohydrates.
Typical carb counts (digestible carbs)
Dense, winter squashes = 10 grams for 1/3-1/2 cup cooked.
Spaghetti squash = 10 grams carbs for 1 cup cooked
Zucchini, summer squash = 2 cups cooked (about 3-4 cups raw)
Hope that helps clarify this squashy issue.
Rachel :-)
