Here's a recipe from my upcoming cookbook: No Meat, No Milk, NO PROBLEM! If

QUICHE

1 unbaked 9-inch pie shell

3 eggs, beaten
2/3 cup milk substitute
1/4 teaspoon salt
1/4 cup nutritional yeast
3 tablespoons lemon juice
2 tablespoons Bragg™ Liquid Aminos or soy sauce
1/2 teaspoon garlic powder
1/8 teaspoon black pepper
1 teaspoon dry mustard (optional)

1 cup chopped onion
1 tablespoon oil
1–2 cups frozen mixed vegetables (thawed completely)

Preheat oven to 400°F. Mix first group of ingredients well. Set aside. Sauté
onion in oil until transparent. Spoon onion and vegetables into pie crust.
Pour egg mixture over all.
Bake about 30 minutes until center is set. Serve at room temperature.

Yield: 1 (9-inch) pie
