Since yesterday, I spoke to the butcher and ordered some grassfed suet.
(I wonder what kind of duty can be slapped on suet crossing an
international border?)

He says he can order any part of the grassfed cow that I want! I am
excited. I like the meat raw. I like sweetbreads and brains and liver and
kidneys but are they any good raw?
Do cows have nice adrenal glands?
I am contemplating what to order. Any ideas?
