Hi Listmates! Just finished making a batch of these; thought I'd like to
share them with the group. Enjoy!! Susan
Homemade Gluten Free Brownies
4 oz. unsweetened chocolate (squares)
2/3 cup shortening
2 cups sugar
4 eggs
1 tsp. vanilla
1/2 cup plus 2 tbsp. rice flour
1/4 cup plus 1 tbsp. each potato starch and tapioca flours
1/2 tsp. xatham gum
1 tsp. baking powder
1 tsp. salt
1 cup chopped nuts
Melt chocolate and shortening in large saucepan over low heat. Remove
from heat. Mix in sugar, eggs and vanilla. Sift in flours, xatham gum,
baking powder, and salt; mix well. Add nuts, mix in. Spread in greased
13x9x2 " pan. Bake at 350 degrees for 25 minutes.
