Tired of the same old breakfast and want something
quick and easy to take on the run to the office?
Adapted a recipe from Southern Living to make it
GF.

Peanut Butter Bread

2 c GF flour (I use almost half brown and half
white rice with enough sweet rice to make it to
the top)
1/2 c sugar
2 tsp baking powder
1 tst salt
3/4 c creamy or crunchy peanut butter
1 large egg
1 c milk

Stir dry ingred in with peanut butter in separate
bowl until well mixed and crumbly.  In separate
bowl, beat egg and milk.  Combine ingrediants.
Pour into greased bread loafpan.  Cook 350 degrees
for 1 hour.  Remove from pan and let cool.

For muffins -- spoon into greased muffin pan 2/3
full.  Can add raisins, nuts, or whatever.

This was sooooo easy and soooo good!  Enjoy!
