DISASTERS:
With the terrible flooding in the midwest,it brings
to mind the importance of having a GF Survival Kit.
What would you do if you had to leave your home and
go to a shelter at short notice. I don't think they
would have a supply of rice cakes and GF foods on hand.

a checklist on emergencies and disasters for the celiac.
Some of the highlights are: Keep a two-week supply of:
Medications - Vitamins - Pain Relievers - Water (1 gal
per person per day) - Dried Foods (Powdered Milk, Tea,
coffee, flours, cornmeal, nuts and fruits, instant pot-
atoes. Make up a mix for muffins or pancakes where all
you have to do is add water) - Canned fruits and Vege-
tables - Juices - Canned meats and fish - canned beans -
staples (sugar, salt, etc.) - Rice cakes - High energy
foods (Jelly, peanut butter, crackers GF) - Candy.
This is only partial but think about it. Also, contact
the American Red Cross/FEMA and ask for "Are you ready?"
