Well, be sure to report eventually on your experiments. Puffed millet,
eaten like a breakfast cereal or made into bar type treats, makes a great
snack, of course. It may be more unusual for people to use it like bread
crumbs. It certainly shouldn't HURT the flavor of the food! At least the
regular non-puffed millet (cooked like rice, except it doesn't take so
long) tastes wonderful. I've only had the puffed millet as a breakfast
cereal, though.
I doubt that you would have to worry about contamination -- the puffed
millet (as well as the non-puffed millet....) is so tiny, a grain of
wheat would be easy to spot."
