Roast chicken (easy, rub with a little salt and sprinkle with garlic slices
or
   other herbs; bake in oven at 350 for 60-75 minutes)
Ruby chard (chopped, steamed, beautiful colors)
Salad with avocado slices and fresh tomato, olive-oil lemon dressing
Baked apples with raisin and nut stuffing, sprinkled with cinnamon.  Use a
sweet
   apple and you won't even want sugar

I'm new to the list; first read Ray's book in December, started the
paleodiet in
January, been reading lots of material from the web page links.  Paleo meals
sit so easily on the stomach.  I would never want to go back to heavy
agricultural feasts.
