I finally received my VERY OWN copy of Neanderthin in the mail, and I have
a couple of small questions...

Ray suggests animal fat be rendered twice to prevent spoilage, in the
preparation of pemmican. What does this mean exactly - melted, then melted
again? Must it cool and then harden between meltings? Does anything have
to be removed during the process?

Is suet/tallow commonly sold on its own, at a grocery store, or do y'all
just remove fat from cuts of meat and render that? I couldn't find suet at
my local supermarket.  BTW it's amazing how little of what a giant
supermarket offers isn't 'forbidden' food.
