I think that coconut milk may be considered "
"not pareve" because it often is "not kosher". That is, the
coconuts are not processed on cleaned, rabbi-supervised
equipment. (So it would be easy for traces of bugs, for example
to be processed into the milk. Even if they're not, and the
processing plant is clean, the kosher bakery wouldn't be
confident without rabbinical supervision.)
I'm just guessing, mind you. I've never checked the kosher
status of a can of coconut milk.
