I have heard that clarified butter doesn't have lactose, and probably
even the protein, which I think are the two main things that bother
people. I personally can eat butter, but not anything that has milk
protein in like cheese or yogurt or straight milk. My guess is that
there are minute traces of protein and lactose in butter, but not
enough to bother me. For someone more sensitive, it may be an area of
caution. The advantage to clarified butter (ghee) is that
theoretically it doesn't need refrigeration. I've always been a litte
leary about that though. Anyone else concur? Carrie
