I couldn't find data for sorghum flour, but did find sorghum itself in the
USDA food composition database.  The following is for 100 g sorghum.
By way of comparison, the figures are as follows:

              sorghum  (brown rice, white rice, whole wheat)

energy (kCal):    339  (370, 365, 327)
protein (g):       11  (  8,   7,  13)
carbohydrate (g):  75  ( 77,  80,  71)
fat (g):            3  (  3,   1,   2)

Note that this is by mass, not volume. I've also rounded the values off.

Sorghum is supposed to be high in vitamins and minerals. If you want more
