This area, anyway, had unbelievable density of wildfowl.

I thought about the lime water.  "Unslacked" lime would be "hot" lime. So
the solution would be more like a solution of wood ashes and water.  I
can imagine keeping things in wood ashes just to keep bugs off, and water
to cool.  So I can imagine that it would probably be a combination one
would stumble into the preservative properties of pretty readily.

If I'm not mistaken, the lime and water trick is what is done to olives,
too.
