A thought strikes me while reading this:
Have you ever tried eating a smaller amount of meat (such
as 8-12 oz a day max), and LOTS more low-carb veggies, both raw and
cooked? Supplement with 1-2 oz of nuts. Your "effective" carb
content would still be very low. And you wouldn't be getting the
back-door carb from protein breakdown.
