Not quite correct. There is only one organization in the US that does not
recommend quinoa and amaranth for celiacs. But all the other US
organizations say they are okay. Plus the leading US expert on wheat
proteins says they are okay. Why this one US organization thinks that these
two grains have gluten has never been explained. Their list of prohibited
grains has other quirks. Until the CSA/USA wakes up and smells the coffee
I'd ignore their list and look to other sources for advice.
