True to the extent that your carb stores (liver and muscle) are full.
If they are not, then protein is simply used to make glucose. On
a low carb (or a typical paleo) carb stores aren't likely to be
full, so excess protein will be used to make glucose. (Actually,
excess protein will be converted to glucose first, then either
stored as fat if no other stores are available, or stored as
glycogen, or used up right away.)
