It would be best to avoid exposing the buffalo liver to high heat. Try
drying it in your oven at a very low temperature (i.e., that of a hot summer
day, 90-100 degrees). Otherwise, you jeopardize the nutrient content of the
liver. Vitamins have a different tolerances for heat. Vitamin A, for
example, holds up fairly well when exposed to cooking temperatures, but
other vitamins are less stable.
IMHO, for your money, the dried liver powder is probably the best option.
