I recently melted some beef marrow, to get the pure fat. The resulting
amount of fat was so much as to be estimeted by eyesight to be at least
half of the raw marrow.
I have found that there is a considerable difference in the consistens
of marrow from a young and an older animal (elk). Older is dryer
and chalky.
