My husband is taking frequent one or two day trips from Seattle to LA, San
Jose, and San Francisco.

His company usually books him on Alaska (which has no GF meals) or Southwest
(which wasn't too helpful in the food department.)

He does like Alaska's leg room because he is tall, but their lack of GF
meals is a real detriment.  When they read him the menu choices and what the
food was in each menu choice, he picked lowfat since it seemed ok.  The meal
turned out to be all wheat/inedible.

Can any of you recommend the best airline for this route, and what to ask
for in terms of the special meal?
