How bad is her intolerance to dairy? Our food co-op here has a soy mozarella cheese that, to me, doesn't seem any different from regular.
I don't usually make pizza with it, but I've made pasta & lasagna with it. I figured out awhile back that when I want pizza really bad what I'm craving is the sauce, cheese, garlic, and pepperoni, so I usually put it all together with a serving of pasta. Eat less that way. :D
I think the brand is called "Soysations".
I can eat dairy, but if I eat too much or eat it every day, it catches up and causes considerable discomfort. :( Hmm...back to topic - I guess it would make a big difference on how she tolerates soy and such. Can't say how the bread part would be that you are describing; I'm not sensitive enough to have to eliminate it entirely. But if she can handle soy, try the soy mozarella.
