Hi,
  After reading your article, I remembered reading that a person with
active sprue (recently diagnosed) cannot handle fructose and sorbitol
which are found in most soft drinks, fruit juices, apples, peaches,
cherries, and other gluten-free foods.  This may explain your reaction
to Coke.
