My organic chemistry book says "Phenols are sufficiently acidic that they
are caustic toward flesh and are poisonous."

Phenols are benzene rings (6 carbons with pi bonds) with one OH- radical
substituting for one of the hydrogens.

BTW - the levels in Liquid Smoke are obviously not high enough to keep
them off the shelves.
